It’s (finally) the end of winter here in Aotearoa — and what a wild one it’s been. The Vitamin D’s been low, the gumboots have been on high rotation, and just when we thought spring was here... the wind and rain roll in again. 😅

But cold days do come with a silver lining: baking season.

Baking = Winter Self-Care

On a wet, windy day, there’s nothing better than cranking up the oven and baking something warm and chocolatey. Cold weather = the perfect excuse to rug up with your favourite comfort food and a good movie.

We’re all about embracing those hibernation vibes — and what better way to do that than with something homemade, cosy, and chocolate-filled?

🍊 TRIPLE CHOC FUDGE COOKIE JAFFA CHEESECAKE BROWNIES

Brownie Layer

  • 200g dark chocolate
  • 125g butter
  • 1 Tbsp cocoa
  • 200g plain flour
  • 50g ground almonds
  • ¼ tsp baking powder
  • 175g brown sugar
  • 1 pack Molly Woppy Triple Choccy Fudge Cookies

Cheesecake Layer

  • 500g cream cheese
  • 90g caster sugar
  • Zest & juice of 1 orange
  • 1 tsp vanilla extract
  • 2 free-range eggs
  • ½ pack Molly Woppy Triple Choccy Fudge Cookies
  • 1 Tbsp long sprinkles

🍪 Method

Brownie Layer

  1. Preheat oven to 180°C fan bake. Grease and line a 20cm tin.
  2. Melt the chocolate and butter over low heat.
  3. In a bowl, mix cocoa, flour, almonds, baking powder, and sugar.
  4. Add the melted chocolate and eggs and mix well. Pour into the tin.
  5. Press cookies in a single layer on top. Set aside.

Cheesecake Layer

  1. Beat cream cheese, sugar, zest and juice until smooth.
  2. Add vanilla and eggs; beat until combined.
  3. Pour over brownie layer and smooth out.
  4. Crumble remaining cookies and sprinkle on top. Add sprinkles.
  5. Bake 35–40 mins until set with a slight wobble.
  6. Cool completely in fridge before slicing.
