Spice up your life and give our Zingy Ginger Delight Banoffee Pie a go!

The humble Banoffee pie is one of the easiest desserts you can make – and it’s a crowd-pleaser (win-win).

We’ve made our version for your eating pleasure and put a Molly Woppy spin on this Kiwi favourite by using our Zingy Ginger Delight artisan cookies for the base – basically, we’ve put the YUM into the crumble. ENJOY!

Molly Woppy Zingy Ginger Delight – Serves 8

Ingredients:

  • 250g Molly Woppy Zingy Ginger Delight cookies (you’ll need 2 boxes)
  • 50g melted butter
  • 1 tin of caramel condensed milk
  • 3 bananas
  • 250g cream (has to be full cream)
  • ½ tsp vanilla essence
  • Chocolate bar of choice (for topping)

Method:

  1. Crush the Zingy Ginger Delights in a plastic bag with a rolling pin.
  2. Melt the butter and mix with the crushed cookies.
  3. Press into a round dish or tin.
  4. Spread the caramel on top of the base and chill in the fridge for 20 minutes.
  5. Once chilled, slice the bananas and arrange evenly over the top.
  6. Whip the cream with vanilla until soft peaks form.
  7. Grate chocolate and sprinkle on top.
  8. Pop into the fridge until ready to serve.
