Smart Baking, Molly Woppy Style 🍫
(aka how to cheat without anyone knowing)

So today I’m letting you in on a little Molly Woppy secret...
The trick to looking like a pro baker without actually doing all the hard yards.
We call it smart baking. You might call it cheating. Either way, it tastes amazing.
The Backstory
At Molly Woppy, we take shared lunches very seriously. I learnt that the hard way after rocking up with a store-bought slice in week one...
Rookie move.
Safe to say, I’ve lifted my game since.
So when Father’s Day rolled around, I pulled out my secret weapon — our Salted Chocolate Cookie Bites — and used them to give this rich, dark chocolate cake the Molly Woppy treatment.
The Recipe: Dark Chocolate Buttermilk Cake
Originally by Abbey Macfie, with a Molly Woppy twist.
You’ll need:
Cake
- 150g dark chocolate
- 125g butter
- 125g flour (GF works too)
- 75g ground almonds
- 150g caster sugar
- 35g cocoa powder
- 1 tsp baking powder
- 150g buttermilk
- 2 eggs
- 75ml strong coffee
Ganache
- 250g dark chocolate
- 200ml cream
Topping
- 1 box Salted Chocolate Cookie Bites, crushed
Method:
- Preheat oven to 175°C, grease and line a 20cm tin.
- Melt butter and chocolate in a pot, then set aside.
- In a large bowl, combine all dry ingredients.
- Whisk eggs into the buttermilk in a separate bowl.
- Pour the chocolate mixture into the dry ingredients and mix. Then add buttermilk mixture, and finally the coffee.
- Pour into tin and bake for 25–30 mins — don’t overbake!
- While that’s in the oven, make your ganache: heat cream, melt in chocolate, then chill until spreadable.
- Press the top of the cake down gently to flatten before it cools.
- Spread ganache over cooled cake and sprinkle generously with crushed Salted Choc Cookie Bites.
